The cuisine is based on a slate with no fixed menu, adjusted daily according to deliveries from local producers: fish from local fishermen, meats from the hinterland, revisited offal such as calf's head, fresh vegetables and fruit. Each dish, elegant and precise, magnifies the product without masking its flavor. Choices include mullet, ratatouille revisited, a savory risotto or a homemade Fontainebleau dessert.
This place is both a restaurant and a wine cellar. Selected with passion, the natural wines - organic, sulfite-free - are explained with pedagogy by Sébastien. There's no fixed menu: the offer evolves according to discoveries, regions and seasons.
